  • 2 chicken breasts, boneless with skin removed
  • 100g spring onions, sliced
  • 2 tomatoes, quartered
  • 225g pineapple cubes, drained
  • 15 ml/1 tablespoon cooking oil
  • 15 ml/1 tablespoon cornflour
  • 42g light brown sugar
  • 60 ml/4 tablespoons cider vinegar
  • 45 ml/3 tablespoons tomato juice
  • 45 ml/3 tablespoons pineapple juice reserved from the tin of cubes)
  • 5 ml/1 teaspoon ginger root, grated
  • 1 clove garlic, crushed
  • Pinch of salt
  • To accompany the dish: boiled white rice


Thinly slice the chicken and place on one side. Mix all the sauce ingredients together. Heat the oil in the Tefal Saute pan until the oil smokes. Fry the chicken in the oil until sealed.

Add the spring onions, tomatoes and pineapple cubes and heat through. Add the sauce mixture and stir. Reduce the heat slightly, if necessary.

Cook until thickened, stirring continuously. Serve with boiled white rice.
