  • 200g salmon
  • 1 egg yolk
  • 150 ml natural fromage frais
  • About 1 tbsp finely chopped fresh mint
  • 1 glass of fish stock
  • Salt and pepper


Cook the salmon for about 6 minutes on each side, gently turning over with a spatula.

Prepare the sauce by mixing together all the ingredients.

Then heat until just boiling.
